Simple, quick and healthy spinach soup

3 tsp butter 1 pk onion 2 pk spring onion 1 pk frozen spinach 750 ml vegetable broth pk fresh pepper pk grated nutmeg
Parsley chips
1 pk grated fresh parsley pk butter pk escarole oil spray

1. Heat the butter in a saucepan. Add the onion and then the spring onions. 2. Once sautéed, add the frozen spinach. Pour in less than a pound of vegetable stock. Bring to a boil. 3. Cook for 10 minutes. Add black pepper and nutmeg to taste. 4. Stir the soup. Add butter to soften. 5. Heat a frying pan and add garlic oil spray and a knob of butter. 6. Add grated parsley (use a potato peeler) and sauté until it starts to brown. 7. Serve the soup hot with a sprinkling of parsley chips, which will add a sweet flavour to the whole dish.
