Sigara boregi

A mixture of Balkan cheese or feta, fresh parsley and cayenne pepper wrapped in cigar-shaped puff pastry, sticks fried in oil until golden brown. Recipe from “VIP Prostřeno” by Anife Vyskočilová.

Procedure:
1. The finished puff pastry must be rolled completely into a ten and cut into a triangle shape, moisten one third of the pastry with water
2. In a bowl mix the cheese together with the pepper and chopped parsley, preferably with a fork to make a consistent mass
3. Spread the prepared cheese filling on the wider bottom part of the puff pastry dough covered with water, roll inwards to keep the mixture in a roll, then fold the two remaining edges inwards, roll to form a “cigarette”, repeat the process
4. Fry the prepared filled sticks – cigars, on both sides, in oil until golden brown.
Recommendation:
Serve these fried sticks with various cold sauces or dips.
Note:
Sigara boregi translates to cigar or cigar.
