Side dish recipe using canned spinach and stewed tomato

Have you ever thought about what to do with all those cans of spinach and stewed tomatoes taking up space in your kitchen? Well, here’s a great recipe for a side dish using both of those ingredients!
Ingredients:
1 can of spinach
1 can of stewed tomatoes
1/4 cup of bread crumbs
1/4 cup of grated Parmesan cheese
1 tablespoon of olive oil
1 clove of minced garlic
Salt and pepper to taste
Instructions:
Preheat oven to 375 degrees.
In a bowl, mix together the canned spinach, stewed tomatoes, bread crumbs, Parmesan cheese, garlic, olive oil, salt and pepper.
Pour mixture into a baking dish.
Bake for 20 minutes or until the top is golden brown.
This dish is great as a side to any main meal. It’s also vegetarian and can easily be made vegan by omitting the Parmesan cheese. If you’re looking for a little more protein, you could add some crumbled tofu or cooked quinoa to the mix
