Recipe from the cookbook “So what do you eat?” by Linda Muller. This is a tried and tested vegetarian recipe prepared from seitan natural and other ingredients. The recipe is inspired by Argentinian cuisine.
Ingredients:
For 2 to 3 servings:
250g
seitan natural
For chimichuri:
1 handful
of parsley
2-3 pieces
garlic cloves
1 pc
small shallot
3 tbsp
olive oil+for frying
1 tbsp
apple cider vinegar
1 tbsp
of soy sauce
1 tsp
of agave syrup
1/2 tsp
dried oregano
several fresh cilantro leaves
juice from half a lime
cayenne pepper to taste
pepper
salt
For fries
500 g
of potatoes
1-2 tbsp
olive oil
1 tbsp
apple cider vinegar
1 tsp
cayenne pepper
1/2 tsp
salt
Procedure:
Place the parsley in a blender and drizzle with oil, vinegar and lime juice, then blend it together with the coriander, oregano, garlic and shallots until smooth, finally seasoning the resulting chimichurri with salt and pepper
.Set aside two tablespoons of the chimichurri (you’ll need it for serving) and add the soy sauce, syrup and cayenne pepper to the rest of the mixture
.Pour the resulting marinade into a plastic bag into which you drop the whole seitan, tie the bag with a rubber band, massage it nicely with your hands and store it in the fridge for at least 1 hour (of course, the longer the seitan rots, the better)

Wash the unpeeled potatoes and cut them into one-centimetre fries, which we coat with a mixture of oleke, vinegar, cayenne pepper and salt
Bake the potatoes in a preheated oven at 200 °C until golden brown
Toss the marinated seitan on a grill or griddle with a tablespoon of oil and sear on all sides until brown
Slice the cooked steak, drizzle with extra chimichurri and eat with crispy fries.
