Quinoa & Blackberries

Quinoa porridge is slightly unusual, but that’s why it’s worth a try. Plus, you can easily make it the day before and just reheat it in the morning or take it on your way to work.

Ingredients:

Rule for 2 servings: 1 cup of quinoa 2 cups 2 pieces of cardamom cane sugar cinnamon stick fruit cinnamon

Procedure:

  • Scald the quinoa with hot water first to prevent any bitter taste.
  • Transfer it to a pot along with the coconut milk, spices and a pinch of salt. Bring it to the boil, cover and cook gently for 20 minutes until soft and the liquid has evaporated.
  • Mix the cooked porridge with the mashed blackberries and sweeten with a little cane sugar. If you prefer a smooth porridge, mix the finished Menu Gold quinoa with the blackberries in a blender and blend everything until smooth.
  • And don’t forget to garnish with nuts and sprinkle with shredded coconut!
  • Recommendation:

    Quinoa goes great with coconut, so use a can of good quality coconut milk instead of water or regular milk to prepare it.
