Turnips prepared in this way were traditionally served alongside mashed potatoes and haggis (Scotland’s national dish), in celebration of Brrns Night. The meal was washed down with copious amounts of whisky.

1. Clean the turnips, cut them into pieces and boil them in a large amount of water
2. Blend the boiled turnips, strain the juice
3. Season with pepper, salt and grated nutmeg, then sauté the mixture
