Sauerkraut with aubergine and buckwheat scoop

“I would never have thought of this combination,” my friend writes. Maybe I wouldn’t have thought of it either, unless I was going to add aubergine to our two-year-old’s diet. The little one loves cabbage, and tomatoes, too. She has grown up with buckwheat porridge since her first feedings and is used to the taste, although I don’t give it to her very often. We used to buy aubergines together at the market. She saw it in a book and liked its shiny, purple cover. We don’t eat raw eggplant as it is very hard to digest, even for an adult. Plus it contains the vegetable protein solanine, which would be a potential allergen, but so does tomato . Cooked it should be a safe ingredient, I’ve tried smothering it like this and combining it with foods she likes. Linda was surprised, she ate a full plate and asked for a duppa. She really liked the scoop of buckwheat. She likes to demolish anything I build, so she mixed it straight into her red mixture. If you wouldn’t mind buckwheat, try using couscous or wheat. (I think this would also be great with dumplings, but again..not very healthy).

On the oil, make a base of finely chopped onion. I drained the sauerkraut, chopped it with a knife into small pieces. It is easier for the children to scoop up when prepared in this way.

Fry the cabbage with tomatoes and thyme, add the chopped eggplant. I washed the eggplant and cut it into small cubes. Add the puree and simmer. Cover with water and simmer until tender. The water evaporates, leaving a tasty juice.

I served it on a deeper plate, where I dumped the cooked buckwheat out of the cup first and then poured – what would you call such a mixture around – the buckwheat? Sauté? Ragout cabbage?:) This dish is really good, and the accident of making it turned into something we’re writing in our family book of favourite dishes
