Pasta with almond pesto

100 g almonds 40 g parmesan 450 g cherry tomatoes 2 pcs garlic salt black pepper chilli pepper olive oil basil 4 slices of anchovies 400 g pasta

Almonds and pasta make a surprisingly delicious combination. A light meal ideal for dinner, too, and you can have it ready very quickly.

Cut all the cherry tomatoes in half. Remove a third and set the rest aside.

In a food processor, first chop the almonds finely. Then add the garlic, chilli, anchovies, parmesan, basil and a third of the tomatoes. Add a little oil, season with salt and pepper. Blend everything together into a paste. If it is very thick, add more oil.

Cook any pasta and drain it so that there is a little water left in it and your food will not be very dry.

Return the pasta to the pot and add the almond paste to it. Stir everything together.

Add the remaining tomatoes to the pasta and stir everything gently so they don’t fall apart.
6.
When serving, garnish the pasta with fresh basil.
