Salmon on Vegetable Recipes from one baking dish

1 pk salmon fillet 1 pk smaller broccoli 2 pk parsley 2 pk carrots 200 g mushrooms 500 g small potatoes cooked in the skin 1 pk lemon (juice) 2 tbsp butter 4 tbsp mayonnaise 1 handful of parsley 1 tbsp mustard 1 tbsp honey salt, pepper, lemon juice for seasoning

Quick, easy, from one sheet pan. A fabulous fish for Good Friday. Not only.

Clean the parsley and carrots and cut into chunks. Clean and cut mushrooms in half or quarters (depending on size). Peel the potatoes. Chop.

Wash the salmon, pat dry, cut three times across to a depth of one centimetre. Drizzle with lemon juice, pour melted butter, salt and pepper.

Place on a baking tray.

Fry the greens and potatoes in butter in a frying pan, season with salt and pepper and place on a baking tray around the fish.

Bake uncovered for about 20 minutes at 225 degrees.

Serve with seasoned mayonnaise.

TIP: If you have small potatoes, leave them whole or just cut them in half. It looks nice.
