1. Wash the zucchini thoroughly, dry and cut lengthwise into thin slices. Drizzle lightly with olive oil and grill on a grill pan or grill on both sides. Then season the zucchini with salt and pepper. 2. Place a slice of mozzarella, tomato and a few arugula leaves on top of each slice. Then roll up the slices and tie them together with a toothpick. 3. Serve drizzled with olive oil and balsamic vinegar.
