Salmon rolls

800 g salmon fillets 2 tbsp arugula 1 tbsp chopped chives 2 cloves garlic 50 g parmesan 60 g chopped pistachios 3 tbsp breadcrumbs to taste salt to taste ground black pepper 40 g butter 5 tbsp sugar 150 ml white wine 1 pinch of thyme
procedure
1. In a bowl, mix the crushed garlic, grated Parmesan, dry roasted pistachios, finely chopped rocket, chives and breadcrumbs. Season the mixture with salt and pepper. 2. Wash the salmon, pat dry with a paper towel and cut into thin slices. Season each with salt and pepper, fill with stuffing, roll up and skewer on a skewer or skewer. 3. Place the rolls in a greased tin and bake in a preheated oven for about 15 minutes. Meanwhile, melt the butter in a pan, add the sugar, white wine and a pinch of thyme. Bring the sauce to the boil and serve with the rolls.
