Salmon on fresh spinach

360 g salmon fillet with skin fresh baby spinach 1/2 pcs lemon slices butter for rubbing parsley (fresh or frozen) salt, ground black pepper oil for rubbing

Suitable for a lighter dinner or lunch.
1.
Place some oil in a baking dish, add fresh spinach and top with a washed salmon fillet. Slice the lemon and parsley and place on top of the salmon. Finally, put the butter pieces on top of the salmon.

Cover the tray with foil and put it in the oven at 190°C for about 20 minutes to stew under the foil, then remove the foil and leave it open in the oven for another 10 minutes.

Obviously the time may vary depending on the type of oven 🙂 I leave the choice of side dish to everyone’s imagination 🙂 e.g. salad, chips, croquettes, fresh bread…
