Carcass roasted with onions, tomatoes and basil.
1. Place the washed and dried meat in a baking dish, season with salt and pepper, drizzle with olive oil and sprinkle with crushed basil
2. Alongside the meat, spread the tomatoes cut into eighths, peeled onions cut into rings, cover, place in a preheated oven and bake at 180 °C until tender, turning occasionally and basting with the broth
3. Once the meat is soft, dust the juices with semi-coarse flour and let it fry.
Serve, for example, with potato rösti.
