Japanese Cabbage Salad

Serve this salad as a side dish with meat and fish dishes. It is a Chinese cabbage cut into noodles, topped with a dressing of dry roasted sesame seeds, vinegar and sugar, and served after it has rested.

Ingredients:

500 g of Chinese cabbage 4 tbsp sesame seeds 3 tbsp sugar 2 tsp salt 1 dl vinegar

Procedure:

1. Chop the cabbage into noodles
2. Dry roast the sesame seeds in a pan, stirring constantly, until they start to crackle and pop
3. Mix the vinegar with the sugar and salt and bring the mixture to the boil, add the toasted sesame seeds to the mixture
4. Put the cabbage in a bowl, pour the cooled dressing over it, weight it down with a plate and leave it to rest for 2 hours.
