Romanian Duck II

Duck roasted until golden brown on onion base together with other ingredients.
Ingredients:
Procedure:
1. Wash the duck well cleaned, dry, cut into portions and salt
2. In a roasting tin, fry the meat portions on all sides until golden brown, remove the meat and fry the peeled, finely chopped onion in the fat, dust with flour and fry
3. To the onions add tomato paste, peeled, finely chopped garlic cloves, whole peppercorns, bay leaves, salt, pour water, boil briefly, put back portions of roasted meat and simmer covered until tender
4. Strain the finished sauce, season with vinegar, pour the sauce over the duck on the plate and garnish with watercress.
Recommendation:
Serve with boiled potatoes.
