Slice the aubergine into thin slices, about half a centimetre. Salt and let stand to let the juices out.

Slice the mushroom, sprinkle with pepper and salt, drizzle with olive oil and put it, covered with foil, to bake for 30 minutes. Then remove the foil and turn on the top grill. Roast until crispy, about 10 minutes.

Wipe off the eggplant with a paper towel, slice the zucchini into thin rounds, and trim the baby carrots.Do not break the cauliflower into florets, but slice the head. Spread everything on a baking tray lined with baking paper together with the roughly sliced onion and garlic cloves.

Sprinkle with seasonings, drizzle with good quality olive or pumpkin seed oil. Place the prepared mixture under foil and bake at 180 degrees for 20 minutes.

Remove the foil, switch the oven to the grill and let it bake for another 15 minutes until crispy.

Toss with the pre-baked mushrooms and serve with herb yogurt dressing or just toasted bread.
