Roasted Aubergine – Melitzana sti
Recipe from “VIP Prostřeno” by Karel Vágner for sliced eggplants coated in flour and fried in olive oil, seasoned with garlic and salt.

Procedure:
1. Soak the aubergines cut into slices about 0.5 cm thick in salted water for 10-15 minutes to get rid of the bitterness
2. Coat the drained, dried slices with plain flour and fry in hot oil, on both sides, until golden brown
3. Rub the fried aubergines with crushed garlic and salt.
