Roast with potatoes

2 tbsp oil or butter 1 pk medium baked potato 1 pk onion 3 pk egg to taste salt, ground black pepper, cumin, smoked paprika some parmesan

I had leftover baked potatoes (in skin) from last night’s dinner. I used them in the roast this morning. It was delicious.
1.
Heat oil, butter or a combination of the two in a pan, add peeled potato, cut into smaller cubes.

Salt it lightly, add crushed cumin seeds, smoked paprika and roast on medium flame until golden.

Then add the finely chopped onion to the potatoes and sauté until golden.
4.
Finally, crack the eggs into the pan and scramble until the consistency you like. Season with salt and pepper.
5.
Sprinkle the roast with parmesan cheese. No need for pastry ;).
