Roast chicken on mushrooms

Simple roast chicken with mushroom flavor and great gravy from the broth.

Scatter the chopped onion in the bottom of the roasting pan.

Salt the chicken well inside and out and place a few mushroom heads, garlic cloves and parsley in the bottom.

Place the chicken on top of the onions, season with pepper, drizzle with olive oil and cover with water or stock.

Covered, bake in a preheated oven at 180°C for about 90 minutes for a medium chicken, depending on size. 20 minutes before the chicken is done, baste with the stock and leave uncovered.

While the chicken is roasting, heat the butter in a frying pan and add the halved mushrooms, salt, thyme and sauté until golden brown. Remove and transfer the mushrooms to a bowl.

Remove the roasted chicken from the baking dish and let it rest while you prepare the sauce.

Place the baking dish over a burner, add water or stock and reduce together for about 15 minutes over a low heat. Finally, strain the sauce, thicken with butter, add chopped parsley and sautéed mushrooms.

Serve the chicken topped with the gravy with steamed rice and pickled Vegetable Recipes or cabbage salad.
