Risotto Frutti di mare

2 tbsp olive oil 4 cloves garlic 400 g mixed seafood “frutti di mare” 1/2 pk lemon 40 g leek 1 cup frozen peas 2 cups rice 1/2 liter fish stock 1 pk bambino cheese pinches of chili 150 ml 33% cream

Fry the garlic cloves whole in olive oil (just a fistful).

Add the seafood mixture, drizzle with lemon juice from half a lemon. Simmer for about 20 minutes.

Next, add the finely chopped leeks and frozen peas. Stir.

Add the rice, stir and pour in the broth.
5.
Simmer on low for about 20 minutes, or until the rice is al dente.

Add the soft cheese – preferably bambino and pour in the cream.
7.
Stir to combine the flavours and reduce until the risotto has a lovely creamy consistency.
8.
Finally, add the minced chilli and stir.
9.
Serve.
