Rice rolls with spinach and smoked Smokey Smackerel

Spinach mixture with couscous, sun-dried tomatoes and Shmakoun wrapped in rice paper rolls and fried.

Procedure:
1. Put the couscous in a bowl, add a tablespoon of oil from the sun-dried tomatoes, pour in the boiling broth and mix with a fork
2. Cover with a plate or foil and after about ten minutes it is ready
3. Mix with the finished spinach mixture, which in the meantime you can prepare as simple as this: Cut the schmakoun into very small cubes (or you can grate it) and fry it in a little oil in a pan
4. Add the chopped tomatoes and after a minute the loose spinach
5. Finally, season with salt, pepper and dried garlic and stir in the corn (and then, of course, the prepared couscous)
6. Let it cool and keep a close eye on it so that no one will dibble, because the goodness is already there
7. Soak a clean cloth in cold water and wring it out, then fold it in half and place one half on a shallow plate or flat tray
8. Place the rice paper on the plate and cover it with the other half of the damp cloth
9. Press lightly to soak up the water. If necessary, add a spoonful of water here and there
10. Carefully transfer the soaked paper to another plate lightly sprinkled with water, put two or three teaspoons of the spinach mixture in the centre and wrap it up
11. Place on a lightly moistened plate and then place in medium hot oil – the rolls should float
13. Serve with vegetable salad, bread or just like that; they are also good cold.
