To start, you’ll need:
1 cup white rice
2 cups water
1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
1 carrot, diced
1 celery stalk, diced
1 green bell pepper, diced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cumin
1 (15-ounce) can diced tomatoes
1 cup frozen corn kernels
1/4 cup chopped fresh cilantro leaves
Now that you have your ingredients gathered, let’s get cooking!
Instructions:
Rinse the rice in a fine mesh strainer and set aside.
Bring the 2 cups of water to a boil in a medium saucepan over medium-high heat. Once boiling, add the rice and stir to combine. Quickly reduce the heat to low, cover the pan with a tight fitting lid, and simmer for 18 minutes.
While the rice is cooking, heat the olive oil in a large skillet over medium heat. Add the onion, garlic, carrot, celery, and green bell pepper. Season with salt, black pepper, and cumin. Cook until the vegetables are tender and starting to brown around the edges, stirring occasionally. This should take about 10 minutes.
Stir in the diced tomatoes (with their juice), corn kernels, and cilantro. Cook for an additional 5 minutes.
Fluff the cooked rice with a fork. Stir in the vegetables. Season with additional salt and black pepper to taste.
