Is it laziness or why are juicy ribs never served at a barbecue? It’s worth fixing. Ribs are really delicious if you take the time to make them carefully.
Ingredients for four
1,5 – 2 kg baby ribs (depending on meatiness)
Soup stock
1 apple 1 teaspoon tomato puree 1 tablespoon cane sugar 1/2 dl apple cider vinegar 1/2 dl &3 tbsp soy 3 dl coca cola 1 tbsp dijon mustard 1 tsp salt 1 tsp pepper 1-5 chillies 1 garlic 1 tbsp ground cumin
Peel the apple and chop in a saucepan. Remove the “hat” from the whole garlic and add to the saucepan with the peel. Put the rest of the ingredients into the saucepan, chop the ribs into a few bone chunks and add them to the pan. Add enough water to cover the ribs.
Simmer for just over half an hour and reduce to a simmer. Remove to the cupboard with the softened pasta.
As a final step, remove the ribs from the pan, cut them into individual bones and transfer to a baking tray. Pour a couple of tablespoons of the flavouring liquid in the pan over the ribs (to keep them juicy in the oven). Start roasting in a 125 degree oven for a couple of hours so that the meat starts to separate from the bone. Toss a couple of times during the oven. You can shorten the oven time and do the rest of the cooking on the grill.
When the ribs are browning, strain the rest of the broth into a saucepan and start cooking. Simmer for an hour and the BBQ sauce will start to get pretty tasty and syrupy. Spoon the sauce over the ribs while they’re roasting.
