Redskin potatoes and basmati rice recipe

1 cup basmati rice
1 cup redskin potatoes, peeled and diced

1 cup water
1/2 cup frozen peas
Instructions:
In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté for 5 minutes, or until softened. Add the rice, potatoes, water, salt, and pepper. Bring to a boil. Reduce the heat to low, cover, and simmer for 20 minutes. Add the peas and cook for an additional 5 minutes.
This dish can be served as is, or with a dollop of plain yogurt or sour cream. It also goes well with a green salad or steamed broccoli. For a heartier meal, you could add some cooked chicken or shrimp. This dish can easily be made ahead of time and reheated when needed.
