Of similar texture, but much quicker and simpler preparation than a flan, panna cotta or panacota is a dessert of Italian origin known worldwide. Its name literally comes from “cooked cream”, although in order to lighten the caloric load it is common to see recipes like this one in which part of the cream is replaced by milk, resulting in an equally delicious dessert like this red fruit panacota that we are going to teach you to prepare today.
Ingredients
For the panacota
. Whipping cream, 200 ml Milk, 300 ml Neutral gelatin, 6 leaves Sugar, 6 tablespoons Vanilla pod, 1 Fresh berries for garnish

Red berries, 1/h4> Assorted berries, 300 g (can be frozen) Orange, the juice of one large one Sugar, 1 or 2 tablespoons Neutral gelatin, 3 sheets
Step 1
To prepare the panacota, soak the 6 sheets of gelatin in a bowl of cold water.
Step 2
Place the milk in a saucepan with the cream, sugar and vanilla pod pulp. Heat over low heat for a few minutes until the mixture is hot but not boiling. Drain the gelatin, pour it into the saucepan and mix well to dissolve completely.
Step 3
Pour the mixture into small glasses or individual flan dishes and let it cool for about ten minutes at room temperature in the refrigerator and three or four hours in the refrigerator until it is curdled.
Step 4
When the panacota is set, we can start preparing the jelly. Start by soaking the 3 sheets of neutral gelatin in a bowl with cold water. While it is hydrated, put the cranberries in a saucepan with the sugar and orange juice. Put the saucepan on the heat, bring to the boil, lower the heat and let it cook for about 10 minutes at minimum heat. Blend with a blender and add the 3 well-drained gelatine leaves. Mix until the gelatin is completely dissolved.
Step 5
Warm the jelly slightly, stirring from time to time until it does not burn. At that moment, while it is still liquid, spread it over the solid panacota very carefully, to do this we will drop the jelly sliding on the back of a spoon so that it falls gently on the panacota. Store in the refrigerator until completely cold.
Notes
You can serve the panacota decorated with some fresh berries in the same cups or, if you have used metal flan pans, you can unmold it to serve it on a small plate as if it were a flan. To facilitate the unmolding, as long as they are metal flan pans, we can dip them for a few seconds in very hot water and when removing them, run a sharp knife around the edge of the panacota.
Watch out, if you have used glass cups, the hot water trick is not useful, because the glass could break due to the temperature contrast.
