Red Cabbage Soup II
A wonderfully coloured healthy soup made from red cabbage, potatoes, onions, vegetable stock and other ingredients, served garnished with sour cream and bread croutons.
Ingredients:
Procedure:
1. Saute two chopped shallots in olive oil, add chopped cabbage, chopped potatoes, season with salt and cumin
2. Pour in the broth (the amount depending on how thick you want the soup) and simmer until tender
3. Then mash everything (whisk with a blender), add sugar and wine vinegar
