Recipe to turn a rotisserie chicken into a complete meal

A rotisserie chicken is a great way to get a complete, nutritious meal with very little effort. With just a few simple ingredients and some quick assembly, you can have a delicious, healthful meal that will leave you feeling satisfied. Here’s a recipe to get you started:
Ingredients:
1 rotisserie chicken
1-2 cups cooked rice or quinoa
1 can black beans, drained and rinsed
1-2 cups of your favorite salsa
1 tablespoon chili powder
1 teaspoon cumin
Shredded cheese, sour cream and/or green onions for topping (optional)
Instructions:
1. Preheat your oven to 350 degrees.
2. start by removing the skin from the rotisserie chicken. You can do this by either pulling it off with your hands or using a sharp knife to cut it away. Once the skin is removed, shred the chicken meat into bite-sized pieces.
3. In a large bowl, mix together the shredded chicken, cooked rice or quinoa, black beans, salsa, chili powder and cumin. Give it all a good stir to combine.
4. Pour the mixture into a baking dish and spread it into an even layer. Cover the dish with foil and bake for 20-30 minutes, or until heated through.
5. Remove the dish from the oven and let it cool for a few minutes before topping with shredded cheese, sour cream and/or green onions (if using). Serve warm
