Recipe to make whoopie pies in waffle maker

Got a hankering for some whoopie pies, but don’t want to go to the trouble of baking them? No problem! You can make whoopie pies right in your waffle maker. Here’s how:
You’ll need:
1/2 cup all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 cup unsalted butter, at room temperature
1/2 cup sugar
1 large egg
1 teaspoon vanilla extract
1/4 cup plus 2 tablespoons whole milk
To make the filling, you’ll need:
1 cup confectioners’ sugar
1/2 cup unsalted butter, at room temperature
1 teaspoon vanilla extract
Dash of salt
Here’s what you do:
Preheat your waffle maker according to the manufacturer’s instructions.
In a medium bowl, whisk together the flour, baking powder, baking soda and salt.
In a large bowl, cream together the butter and sugar until light and fluffy.
Beat in the egg and vanilla extract.
Alternately add the dry ingredients and milk to the batter, beginning and ending with the dry ingredients.
Grease the waffle maker with cooking spray (you’ll need to do this every time you make a whoopie pie)
