Ingredients:
1 pound of beef stew meat
1 large onion, chopped
3 carrots, peeled and diced
3 celery stalks, diced
1 tablespoon of olive oil
4 cups of beef broth
1 bay leaf
1 teaspoon of dried thyme
1/2 teaspoon of salt
1/4 teaspoon of black pepper
2 tablespoons of flour
2 tablespoons of water
Instructions:
In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef stew meat and cook until browned on all sides. Remove the beef from the pot and set aside.
Add the chopped onion, carrots, and celery to the pot. Cook until the vegetables are tender. Add the beef broth, bay leaf, thyme, salt, and black pepper. Stir well and bring to a boil.
Reduce the heat to low and add the browned beef back into the pot. Cover and simmer for 1-2 hours, or until the beef is cooked through.Remove the bay leaf before serving.
Just before serving, whisk together the flour and water in a small bowl. Add this mixture to the stew and stir until thickened. Serve immediately.
