Recipe to make mandel bread with 1 to 1 gluten free flour

Mandel bread, or mandelbrot, is a delicious traditional Jewish cookie. This recipe is for a gluten free version, using 1 to 1 gluten free flour. You can use any type of gluten free flour, but I find that 1 to 1 works best.
The ingredients you’ll need for this recipe are:
-1 cup (120 grams) 1 to 1 gluten free flour
-1/2 cup (100 grams) sugar
-1/2 teaspoon baking powder
-1/4 teaspoon salt
-1/2 cup (120 ml) oil
-2 eggs
-1 teaspoon vanilla extract
Instructions:
1. Preheat your oven to 350 degrees Fahrenheit (180 degrees Celsius).
2. In a large bowl, whisk together the flour, sugar, baking powder and salt.
3. In another bowl, whisk together the oil, eggs and vanilla extract. Add this wet mixture to the dry ingredients and stir until everything is combined.
4. Place spoonfuls of dough on a baking sheet lined with parchment paper. You can flatten them out a bit if you like, but they don’t have to be perfect.
5. Bake for 10-12 minutes, or until they are golden brown. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely
