Recipe to make cream of chicken soup from scratch

This homemade cream of chicken soup is made with only a few simple ingredients, and it’s so much tastier than the canned soup! It’s perfect for a weeknight dinner, and can easily be made ahead of time. You can use it as a base for other soups and stews, or enjoy it on its own.

To make the soup, you’ll need:

1 lb. boneless, skinless chicken breasts
1 onion, diced
3 carrots, peeled and diced
3 celery stalks, diced
1/4 cup all-purpose flour
4 cups chicken broth
1 cup milk
1/2 tsp. dried thyme
1/4 tsp. black pepper

Instructions:
1. In a large pot or Dutch oven, sauté the chicken in olive oil over medium heat until browned.
2. Add the onion, carrots, and celery, and sauté for 5 minutes.
3. Stir in the flour, and then add the chicken broth and milk.
4. Season with thyme and black pepper.
5. Bring the soup to a simmer, and cook for 10 minutes.
6. Serve hot with some crusty bread.
