You can use any kind of cake mix for this recipe or even a homemade cake mix. If you want to save time, you can use a cake mix. The following is a recipe for a mini cherry cake made with cake mix:
Ingredients:
1 Box of Cake Mix (any kind)
1 Can of Cherry Pie Filling
1 Tub of Cream Cheese Frosting
1 Cup of Fresh Cherries (optional)
Instructions:
Preheat oven to 350 degrees.
Mix the cake mix according to the package directions.
Pour the cherry pie filling into the bottom of a cupcake pan.
Fill each cupcake well about halfway with the cake batter.
Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
Remove from oven and let cool completely.
Once cooled, frost with cream cheese frosting and top with fresh cherries (optional)
