Recipe for vegetarian bar BBQ made out of squash

Here’s a recipe for a vegetarian squash barbeque that’s sure to please everyone at your next backyard gathering!
Ingredients:
1 large squash, peeled and cut into chunks
1 large onion, peeled and diced
1 green pepper, diced
1 tablespoon olive oil
1 tablespoon balsamic vinegar
1 teaspoon smoked paprika
1 teaspoon ground cumin
Sea salt and freshly ground black pepper to taste
Instructions:
Preheat your grill to medium-high heat.
In a large bowl, combine the squash, onion, green pepper, olive oil, balsamic vinegar, smoked paprika, cumin, salt and pepper.
Toss to coat evenly.
Place the vegetables on the grill and cook for about 10 minutes, or until tender, stirring occasionally.
Serve on whole wheat buns with your favorite condiments.
Tip: If you’re not a fan of squash, you can also use eggplant or zucchini in this recipe
