Recipe for vegan jam using fresh pomegranates

Did you know that you can make a delicious and healthy vegan jam using fresh pomegranates? This recipe is easier than you might think, and the finished product is perfect for spreading on toast, adding to oatmeal or yogurt, or enjoying straight from the spoon!
Here’s what you’ll need:
1 cup pomegranate seeds
1/2 cup sugar
1 tablespoon freshly squeezed lemon juice
Here’s how to make it:
Place the pomegranate seeds in a medium saucepan.
Add the sugar and lemon juice and stir to combine.
Place the pan over medium heat and bring to a simmer, stirring occasionally.
Once the mixture has thickened and the pomegranate seeds have burst, remove from the heat.
Allow to cool slightly, then transfer to a jar or container and store in the fridge for up to 2 weeks.
This jam is so good, you’ll want to put it on everything! Try it on toast with peanut butter, stirred into oatmeal or yogurt, or just eat it straight from the spoon
