Recipe for Southern-style oven-braised chicken

Who needs a deep frying pan when you can get tasty chicken from your oven? This chicken is covered with a little butter and a seasoned biscuit, then cooked in a hot oven.
In the recipe, use chicken legs and thighs or trimmed chicken . If you use boneless chicken, the cooking time will be shorter.

What you’ll need
1 chicken broiler, about 2 to 2 1/2 cups, cut into 8 pieces 1/2 cup decent dry breadcrumbs 2 teaspoons salt 1 teaspoon paprika 1/4 teaspoon. 1/4 cup vegetable oil or melted butter
How to make it
Preheat oven to 425 F. Lightly oil a large, low baking sheet or spray it with olive oil with a spray bottle. Combine breadcrumbs, salt, paprika and pepper. Rub each piece of chicken with vegetable oil or melted butter and then roll in crumb mixture. Arrange the chicken pieces on a prepared baking sheet, skin side up. Bake the baked chicken pieces in a preheated oven for about 35 to 45 minutes, or until the chicken is tender and the juices run clear. According to USDA guidelines, chicken should be cooked to at least 165 F (or above). Use a reliable food thermometer or rapid-reading thermometer to check if this is necessary. Insert the thermometer into the thickest part of the chicken, not into the intact bones or wings.
