Recipe for smoked oysters
These smoked oysters disappear as soon as they are delivered. They come from a smoker who is ready to eat, with a hint of smoke to complement the brine. But you can certainly add some cocktail sauce or gremolata if you like. They’re even easier to make with a baking smoker .

8 – 12 fresh, live oysters
How to make it
Set up your smoker or baking oven according to your instructions. Add the oysters, cover and smoke for 15 to 20 minutes until the oysters are loose.
Variations and pairings
Eat the smoked oysters plain or try one or two different mignonette sauces . Top with some pomegranate seeds for each unique texture and sweetness. Pair the smoked oysters with wines a little heavier than the hallmarks. A heavily oaked Chardonnay , extra hot Champagne (a bit sweeter than almond cognac) or a heavier rose would pair well with these oysters.
