Recipe for making meatloaf using cauliflower

Typically when you think of meatloaf, you think of ground beef as the primary ingredient. This recipe offers a delicious and slightly healthier alternative by using cauliflower in place of some of the ground beef. This recipe is easy to follow and yields a delicious and moist meatloaf that the whole family will love!
Ingredients:
1 lb. ground beef
1 small head of cauliflower, grated or finely chopped
1 onion, diced
3 cloves garlic, minced
1 egg
1/2 cup bread crumbs
1/4 cup ketchup
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
Instructions:
Preheat oven to 350 degrees F.
In a large bowl, mix together ground beef, grated cauliflower, onion, garlic, egg, bread crumbs, ketchup, Worcestershire sauce, salt, and pepper.
Pack mixture into a loaf shape on a baking sheet lined with parchment paper or foil.
Bake for 50-60 minutes, until the meatloaf is cooked through.
Let rest for 5-10 minutes before slicing and serving.
You can serve this meatloaf with mashed potatoes or roasted vegetables. It’s also great sliced and served on sandwiches the next day
