Recipe for Guianese fried bakes

This recipe is for a traditional fried pastry called Guiana fried bake. They are also called Trini bakes, bakes and floats.
Although it is called baking, it is not baked in the oven. Rather, it is fried. Floats is the most appropriate name for them, because once the oily solid falls to the surface and pulls up.
Baking is the most common cover for baking, battering or frying saltfish.
What you’ll need
4 cups flour (all-purpose) 4 teaspoons baking powder 1/4 teaspoon salt 1 tablespoon sugar (granulated white) Optional: Cinnamon 1 tablespoon oil (unsalted) 1 cup lukewarm water 2 cups oil (for deep frying)
How to make it
In a large bowl, mix flour, baking powder, salt, sugar and optional cinnamon until finely blended.
Butter or flour mixture.
Add enough water to make a soft dough, 1 tablespoon at a time. Once the dough is assembled, mix for 2 to 3 minutes. Rub the dough with a little oil and let rest, covered for at least 30 minutes.
Take 1 minute to top the dough and divide the dough into 10 equal pieces and shape into balls.
Heat the oil in a deep skillet and run at 350 F. The oil should be hot, but definitely not smoking.
Place one piece of dough around a 3 1/2 to 4-inch circle. Add the batter to the oil to heat through. The dough should pour and within 2 seconds begin to float to the top of the pan. Using a long-handled handled spoon, spoon the oil over the dough so it continues to swell. As soon as it is completely puffed, slide it over. You’ll know it’s starting to bubble and move around in the pan. Let cook until the underside is nicely browned.
Clean the spoon, remove the cooking excess oil from the spout. Place in a paper towel covered bowl.
Repeat the process until all the cooked steak is browned.
Serve with fried shark or fried (salted) saltfish. Eat as is with cheese, butter, ham, jam or jellies.
