Who doesn’t love chicken spread? It’s creamy, flavorful and versatile. And the best part is, it can be frozen! This means you can make a big batch and have it on hand for when you need it. Here’s how to make your own chicken spread that can be frozen:
You’ll need:
1 pound (450g) boneless, skinless chicken breasts
1 cup (240ml) mayonnaise
1/4 cup (60ml) Dijon mustard
1/4 cup (60ml) white wine vinegar
1 tablespoon (15ml) honey
1 teaspoon (5ml) smoked paprika
1 teaspoon (5ml) garlic powder
1/2 teaspoon (2.5ml) salt
1/4 teaspoon (1.25ml) black pepper
Instructions:
Place the chicken breasts in a large saucepan and cover with water. Bring to a boil over medium-high heat and cook until the chicken is cooked through, about 10 minutes. Remove from the water and let cool.
In a food processor or blender, combine the cooked chicken, mayonnaise, Dijon mustard, white wine vinegar, honey, smoked paprika, garlic powder, salt and black pepper. Blend until smooth.
Taste and adjust seasoning as necessary. Spoon into a clean, airtight container and store in the fridge for up to 2 weeks or in the freezer for up to 6 months.
