Recipe for autoimmune.protocol diet that’s low oxalate and diabetic friendly

If you have diabetes and are following the autoimmune protocol diet, it can be difficult to find recipes that are both low oxalate and diabetic friendly. This recipe for a simple vegetable soup is both of those things, and it’s also easy to make!
Ingredients:
1 tablespoon olive oil
1 onion, chopped
2 celery stalks, chopped
1 carrot, chopped
8 cups chicken or vegetable broth
1 bay leaf
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1 (15-ounce) can diced tomatoes, undrained
1 zucchini, chopped
1 yellow squash, chopped
1 cup frozen green beans
Instructions:
Heat the oil in a large saucepan over medium heat. Add the onion, celery, and carrot. Cook, stirring, until the vegetables are tender, about 5 minutes. Add the broth, bay leaf, thyme, salt, and pepper. Bring to a simmer and cook for 10 minutes. Add the tomatoes with their juice, zucchini, yellow squash, and green beans. Simmer until the vegetables are tender, about 10 minutes. Remove the bay leaf before serving.
