Wash the meat, pat dry and scrape it into a bowl with a sharp knife. If we can’t scrape the meat, we can grind it finely. With wet hands, shape the meat into 4 loaves, which are then spread out on plates. Make a well in them and carefully place the egg yolk in it.

Cut the onion finely, add it to the meat along with the mustard, ketchup and worcestershire sauce. Each person prepares his/her own tartar sauce on the plate according to his/her taste.

Cut the bread into slices and fry it in a frying pan in a little oil. Serve the toasted bread rubbed with garlic and tartar sauce.
