Real beef broth is not a classic Sunday broth, as it is very time consuming to prepare. However, the flavor you “pull” out of the slow-cooked broth in a way called straining is incredible. You can serve the broth prepared in this way as a soup or freeze it and use it anytime instead of broth. In our country we also call it penicillin and it really is.1
1.
Wash the beef and bones with boiling water.
2.
Clean and chop all your Vegetable Recipes.
3.
In a large saucepan, melt the butter and add the cleaned Vegetable Recipes. Sauté for about 8-10 min. The Vegetable Recipes sautéed in this way will add a beautiful color to the broth.
4.
Then pour cold water over the Vegetable Recipes.
5.
Add the browned beef and bones. Let it boil uncovered.
6.
After boiling, skim off the foam from the broth.
7.
Next season with salt, whole pepper and a bunch of parsley. Let simmer again for a while.
8.
Transfer the entire broth with the Vegetable Recipes, meat and bones to a slow cooker (or slow cooker). Set to low heat and cook like this for 12 hours. If you don’t have a slow cooker, you can leave the broth in the pot and cook just below boiling for 8 hours.
9.
Serve with rice noodles.
