Raw cauliflower with tahini dressing recipe

Cauliflower is a extremely versatile vegetable. You can use it in so many different dishes, from roasting it and using it as a pizza base, to blitzing it into a tasty soup. One of my favourite ways to enjoy cauliflower is in this raw form, with a delicious tahini dressing.
The key to this dish is to use a sharp knife to chop the cauliflower into thin, even slices. This not only looks pretty, but also means that the cauliflower will absorb more of the lovely dressing. The tahini dressing is made with just a few simple ingredients, and comes together in no time at all. Simply whizz everything up in a blender or food processor and you’re done.
If you want to add a little more protein to this dish, you could try topping it with some grilled chicken or salmon. Otherwise, it’s perfect just as it is. I like to enjoy this raw cauliflower salad as a light lunch or starter, but it would also make a great side dish.
Raw Cauliflower with Tahini Dressing Recipe
Ingredients:
1 head of cauliflower, sliced thinly
2 tablespoons tahini
1 garlic clove
1 lemon, juiced
1 tablespoon olive oil
Salt and pepper to taste
Instructions:
Place the cauliflower slices in a large bowl.
In a small bowl or jug, whisk together the tahini, garlic, lemon juice and olive oil.
Pour the dressing over the cauliflower and season with salt and pepper.
Toss everything together until the cauliflower is well coated.
Tips:
If you want to bulk this dish out, you could try adding some cooked rice or quinoa.
If you’re not a fan of raw cauliflower, you could try roasting it first before adding the dressing
