1 pk eggplant 3 pk small zucchini 3 pk colored peppers 3 pk tomatoes 2 pk onions a little olive oil 1 can peeled tomatoes 1/2 KL basil, thyme, oregano, rosemary 1 clove garlic to taste salt, ground black pepper
procedure
1. Wash the aubergine, slice, place on paper and season with salt. Let it stand like this to lose its bitterness and excess water. 2. In hot oil, fry the chopped onion in large pieces, after a while add the diced coloured peppers. Stir in the zucchini cut into smaller pieces, the dried aubergine, peeled and fresh tomatoes. Season the ratatouille with herbs, pressed garlic, salt and pepper. 3. Simmer the mixture over a low heat until most of the water has evaporated. You can add more salt or pepper to taste and you are done.
