The Vegetable Recipes bring a very special juiciness to any omelette. Leaving a little of the fabulous potato omelette that we love so much in Spain, either perfect with onion or without onion for the weirdos, we find many possibilities both in the traditional format and in other formats: see the tortilla vaga or the Italian type frittata (sweet potato and blue cheese, for example).
On this occasion, the protagonist will be the traditional Manchego ratatouille which I recommend leaving quite dry for the case that concerns us because if it were left with too much sauce the omelette would suffer in the same way. What is special about the preparation, above all the rest, is the way of curdling it so that it is neither too liquid nor slimy inside.
Something that I never do with the classic potato omelette I do in this omelette: stir the mixture a little once I throw it on the pan. This way the egg curdles on all sides forming a kind of scrambled eggs that will be the inner content of the omelette.
It is important, of course, to use a pan that is very reliable and does not stick, I always recommend a non-stick pan. One of the great things about this ratatouille omelette is also how quick it is to make, because it is normal that we have the ratatouille already prepared in advance and that the omelette is, in fact, a recipe to take advantage of it so that we do not get bored of always eating it the same way.
The ratatouille with egg mollet or fried eggs is very good, as is the ratatouille with cod, but it is always better to make extra and thus have for other elaborations later as could also be an empanada of ratatouille, egg and tuna.
You will get a curdled omelette, not mellow like the fantastic omelette with tuna, but tremendously juicy, thanks to the addition of zucchini and eggplant, and with a lot of flavor. Using quality eggs is crucial, the same as for a cod omelette, or even in a quick brie and chorizo omelette…. how good they are!

Ingredients
.For the ratatouille
Red onion, 2 pcs Courgette, 1 pc Eggplant, 1 pc Red bell pepper, 1/2 pc Green bell pepper, 1/2 pc Fried tomato (better if homemade), 120 g Extra virgin olive oil, 4 tablespoons Salt, c/s Ground black pepper, to taste Sugar, 1 teaspoon (optional)
For the omelette
Quality eggs, 6 pcs Salt, 1 pinch Pisto, half of the prepared recipe Potato chips, 80 g (optional)
Step 1
If we don’t have the pisto ready, the first thing we will have to do is to make it. To do this we will peel the onion and chop it finely in an irregular manner. Put the onion in a pot with the oil and begin to poach over low heat with a little salt.
Step 2
Meanwhile chop the red bell pepper and the green bell pepper, removing the white parts and also all the seeds and the stalk, and add it to the onion. Poach over low heat so that everything becomes very tender.
Step 3
Wash the zucchini and eggplant and cut into squares, leaving the skin on. Add to the stew when the previous is already very poached. Cook for about 10 minutes and then add the fried tomato. Mix well and let it cook covered, over low heat, for about 20 minutes. To each one’s taste, I like the eggplant and zucchini to be slightly bitten. When it is as we like, add salt, black pepper and, if desired, sugar to counteract the possible acidity of the tomato. Cool completely.
Step 4
Whisk the eggs with a fork in a bowl until they are well mixed. Add the salt and also the ratatouille and mix well.
Step 5
Heat a frying pan over high heat with oil and pour the preparation, lower the heat to medium and stir lightly making a sort of scrambled eggs. Then, raise the heat slightly and let it make a film on the outside. Lower the heat again and cover so that it cooks slightly with its heat.
Step 6
Slightly separate the edges with a thin spatula and very carefully and flip the omelet. Wait until the pan is very hot again, add more oil and set on the other side.Ready!
