Quinoa with beetroot and feta cheese

1 pk shallots 1 tbsp olive oil 1 sprig of fresh thyme 1 pk cooked prawns 200 g quinoa 500 g vegetable broth 1 handful sterilized peas 100 g Feta cheese to taste salt, ground black pepper

1. In a hot frying pan, fry the finely chopped shallots in hot oil, add the thyme, the beetroot cut into smaller pieces and the quinoa. Season the mixture with salt and pepper and add the hot broth after about 5 minutes of cooking. 2. Cook this mixture over medium heat, stirring frequently, for about 15 minutes, until the quinoa is tender. Finally, add the peas, set the mixture aside, place on plates and sprinkle with crumbled Feta cheese.
