Quinoa pancakes

ingredients

340 g quinoa 4 pcs egg 1 pinch sea salt 15 g chives 1 pcs onion 15 g grated Parmesan 3 cloves garlic 100 g wholemeal breadcrumbs a little olive oil

procedure

1. Cook the quinoa in advance and leave to cool. Then mix it with the eggs, salt, finely chopped chives, onion, grated Parmesan, pressed garlic and thicken the mixture with breadcrumbs. Place the finished mixture in the fridge for a while. 2. Then shape the mixture with your hands into pancakes and bake them on both sides in hot olive oil. The baked pancakes can be served warm or cold. The finished mixture can also be left in the fridge for one or two days and can be prepared at any time.
