Sometimes we don’t have enough time to cook. Instead of a cold lunch, you can prepare such very easy and flash recipes. You can still vary the vegetable noodles by using a different mix of ingredients.

This recipe is very quick. Therefore, you should use frozen Vegetable Recipes that you just pour into the pot, salt and cook until soft. Then put it in a bowl, mash it into a smooth mixture.

Add two beaten eggs to the Vegetable Recipes. Now start adding the flour and breadcrumbs in equal proportions. Give them progressively, the exact amount cannot be recommended as it also depends on the composition of the vegetable mixture. A drier one needs less, a more watery one more. Halfway through the mixing, add salt, pepper and any herbs. When the base for the noodles is stiff enough, proceed to the next step.

Divide the mixture into eight equal bowls. Dip your hands in water and shape into patties to place on greaseproof paper. Brush them with olive oil and put them in a preheated oven at 200 degrees.

When the cutlets are golden, remove the baking dish from the oven. You can serve them with mashed potatoes and your favourite dressing.
