You must have had a sudden surprise when your friends called to say that they were coming to visit you. That’s when you’ll be delighted with such easy and quick cakes that are ready in half an hour. You can always swap the pears for other fruits to keep the dessert more interesting.

To save time, it is quickest to make the pie from ready-made dough. If you don’t want to buy it, pre-work it in your freezer and as long as you clean the fruit, it’s ready to be processed. Place the pans in which you will bake the pie on top of it, upside down. Cut out the shape according to their size.

Fill all the dishes with the batter. If it doesn’t reach to the top, cut off a little more and top it up. Prick the top with a fork and put them in the oven on 200 degrees.

Bake the base crust for 10 minutes. Meanwhile, clean your pears and cut them into smaller cubes. Beat the egg whites, sugar and vanilla into stiff peaks.

Remove the cakes from the oven. Put a spoonful of apricot jam on the bottom of the pastry and spread it. You can also replace it with another sour jam – for example, raspberry or currant jam.

Place the sliced fruit on top. You can also vary this as much as you like. Finish the dessert with a scoop of whipped cream.

Place the cakes back in the oven and bake until the meringue is crisp and lightly browned. In the meantime, you can prepare another snack.

When your visitor rings your doorbell, the cakes will be just about ready. Remove the dish to a serving platter and serve the dessert this deliciously warm.
