Quesadilla vegetarian style, with mushrooms and a piece of Slovakia

6 pcs spring onions (chopped) 4 cloves garlic (grated) 1 pcs sweet red peppers 2 pcs medium sized mushrooms 160 g sterilized corn 160 g sterilized beans 6 green olives 200 g g grated cheese (cheddar, edamame, emmental, …) 2 tbsp olive oil 4 pcs tortilla (wheat or corn tortilla) dried herbs (basil, oregano, rosemary…) salt, ground black pepper 2 tbsp hot sauce

I was inspired by Street food fest – why not try it at home? A nutritious and tasty meal that’s easy to adapt to any member of the household.

Prepare all the necessary ingredients.

Cut onion, garlic and bell pepper finely and fry in oil.

Now add the mushrooms and saute briefly until they catch the right color.

Salt, pepper, add rinsed corn, beans, chopped olives, oregano and stir.

Now it’s the turn of a few spoonfuls of the spicier tomato sauce. Or straight Mexican chunky salsa.

Take a tortilla and put cheese on half of it – so that the edges are loose.
7.
Pile the prepared filling on top of the cheese. Be careful not to let it leak out.
8.
Fold in half. Toast in a dry hot frying pan.
9.
Turn the crust over the center of the crust to prevent the filling from falling out and finish baking the other side.
10.
Serve with salsa or as we do – Slovak style: cucumber salad and flavored sour cream.
